chavrie-goat-cheese Breaded Goat Cheese Salad with Dried Fruit and Pomegranate Recipe
serves 1 as an entree

4 tbsp bread crumbs, I used italian herb and garlic flavored bread crumbs
3 heaping tbsp goat cheese
1/2 tbsp chopped dried fruit, I used dried apricots and crystallized ginger
3 large romaine leaves, torn into pieces
2 tbsp fresh pomegranate seeds
Salt and pepper
Olive oil and red wine vinegar or balsamic vinegar to serve on the side as dressing.

Place the bread crumbs in a small skillet and toast on low heat till bread crumbs are lightly browned. Turn off heat. Mix goat cheese (make sure its cold) with chopped dried fruit. Take 1 heaping tbsp of the goat cheese mixture. Using your fingers form the goat cheese into a ball and then flatten it into a disc. Gently press the goat cheese disc into the toasted bread crumbs. Make sure all sides are coated. Repeat with the remaining goat cheese and bread crumbs. You should have 3 breaded goat cheese discs.

Place the torn romaine lettuce in a plate. Arrange the goat cheese discs on top. Sprinkle with pomegranate seeds, salt and pepper. Serve oil and vinegar on the side for dressing the salad.

This salad looks fantastic! I just made an asparagus soup with chevrie a few weekends ago from a recipe on their website and it was awesome! Can’t wait to give this a try :)

  2. I would love to try this cheese with cranberries.
I think stuffing figs with this cheese and drizzling with some honey would also be a nice appetizer.
Love the bread board. I missed the last give a way…but I’ll keep visiting your site cause your recipes are delish.

  4. We recently tried goat cheese and liked it.. but this is gorgeous!!
I did wonder what would go well with goat cheese and lo! I have my answer, ginger!! I would never have thought of that!
The pom seeds make it look so colorful! Too good!

  5. That looks really good! I have always had goat cheese cold so I will see how I like it with a warm breaded topping.

@Nancy, actually the cheese doesnt get hot. its only the read crumbs that are heated. you only roll the cold cheese in the bread crumbs! i found this easier than breading the ‘proper’ way and its so much easier to work with cold goat cheese! holds its shape!

  6. Yum! I love goat cheese any way you give it to me but I love little medallions like these on salads. Thanks for the reminder. I’m going to have to add them to my menu for next week!

  7. I just started adding pomegranates to salads recently. I saw one at our local co-op at the check-out counter and decided to give it a whirl….but I couldn’t get the seeds out without them flying all over my kitchen. Oh well, they tasted great once they made it in the salad.

Recently I’ve been loving Boston butter lettuce topped with some arugula and goat cheese and mango. There’s something about the mildness of the butter lettuce combined with the spiciness of the arugula and the creaminess of the cheese. Yum! Thanks for the new recipe ideas!

  8. I never used to be much of a cheese fan. I loved feta, but could pass on everything else… that was until I tried goat cheese! I’m now a total fan, plus it has inspired me to branch out and retry cheeses I had dismissed in the past!

  9. Goat cheese is my crack, and my dog’s crack and my cat’s crack… really I don’t know anyone in the house who doesn’t love that stuff. The turtles might not. I’ll ask them tonight.

Can’t wait to try this! Also, removing pomegranate seeds under water is going to make
cleaner work of my Thanksgiving pomegranate salad! Thanks, pictures are great.

  15. Oh, I like that these goat cheese rounds aren’t fried like some I’ve had, but should have a similar texture and flavor due to the toasted bread crumbs.

  19. This dip looks really good! FYI just because someone is lactose intolerant doesn’t necessarily mean that they cannot eat goat cheese. I am super lactose intolerant of COW’s milk and normal cheeses BUT I can eat goat cheese all I want… and I do!

P.S. your pics are looking GREAT by the way ;-)

  20. it’s fun, in France we have the brand “Chavroux” for goat cheese, with quite the same packaging… wonder if it’s a renaming of the same brand, or just two different brands?
