		<description>I make this dip a lot in the summer, when I have eggplant coming out of my ears (I always plant too much in my garden and never know what to do with it all!), but I love the touch of the pomegranate. Definately an interesting twist given that they come from a different season, although I guess it&#039;s easy enough to find eggplant year-round now! I like to roast my eggplant and Vita-mix it with the skins (I hate wasting them), but always wonder if there&#039;s a good reason to leave the skins out...</description>
