You can also use orange juice instead of lemon juice, it gives a sweet flavor and also keeps the citric taste. Also one of my favorite recipe.

Shulie this is one of my favorites and I cannot tell you how much i can indulge with this apparently healthy little dish! I am blown away by the photographs, cannot take my eyes off them. The pomegranates are lovely here. So is your recipe, styling and composition.

I make this dip a lot in the summer, when I have eggplant coming out of my ears (I always plant too much in my garden and never know what to do with it all!), but I love the touch of the pomegranate. Definately an interesting twist given that they come from a different season, although I guess it’s easy enough to find eggplant year-round now! I like to roast my eggplant and Vita-mix it with the skins (I hate wasting them), but always wonder if there’s a good reason to leave the skins out…
