Fresh Cherry Cardamom Pie

Take the everyday, all-American cherry pie, add some cardamom to it, and turn it into an exotic flavored pie. The cardamom scented filling is easy to make – just mix cherries, lemon juice, suagr, corn starch, and cardamom. 

I dont have a cherry pitter, so I just cut around the pit with a knife.

I made Ina Garten’s pie crust recipe which is buttery, flaky and delicious. You can keep things simple and use a store bought pie crust. However, keep in mind that most store bought pie crusts, pie shells, and pie dough are not vegetarian, they may contain lard. The only vegetarian pie crust I’ve seen is Mrs.Smith’s pie shells.

Here is a cherry pie recipe on joy of baking using some kirsch (a type of cherry liquor) on the filling – a great idea! This baked fresh cherry pie recipe on all recipes  also sounds delicious. Notes

- make sure the butter, shortening and water for the pie crust are very cold, this is what makes a flaky crust

- if you are not crazy about cardamom in the pie filling, use almond extract instead

- you can make the same recipe with apples instead of cherries

Fresh Cherry Cardamom Pie Recipe

serves about 8

for cherry pie filling
4 cups pitted sweet cherries
6 cardamom pods
4 tablespoons cornstarch
2 tablespoons lemon juice
a pinch of salt
3/4 cup sugar
1/4 teaspoon vanilla extract or a few drops of rose essence

other
1 recipe (two 10 inch crusts) home made pie crust (see recipe below) or store bought pie crust
1 egg, beaten with a teaspoon of water
1 tablespoon sugar to sprinkle on top

Pre-heat oven to 400f.

Place pitted cherries in a large bowl. Smash the cardamom pods using the back of a wooden spoon. Remove the little seeds from inside the cardamom pods. Place these seeds in a coffee grinder or mortar and pestle and grind to a powder. Add cardamom powder and all other ingredients for filling to the bowl, mix well. Refrigerate while you work on the pie crust. See pie crust recipe below.

Place one pie crust on a 10 inch pie dish. Pour the cherry filling into the dish. Place second pie crust on top. Cut away over hanging bits. Tuck edges in. Crimp the edges to seal.  Make a few slits on top to vent steam. Brush the top with the beaten egg wash. Sprinkle sugar all over. Cover the crimped edges with a strip of foil to prevent from burning. Place on a baking sheet and bake till the crust is golden, 50 minutes to 1 hour. Remove foil half way through baking.

Ina Garten’s Pie Crust recipe

makes two 10 inch crusts

12 tablespoons ( 1 1/2 sticks) very cold unsalted butter
3 cups all purpose flour
1 teaspoon salt
1 tablespoon sugar
1/3 cup very cold vegetable shortening
1/2 cup ice cold water
Ina uses a food processor. I used a pastry cutter and my hands.

Place a large bowl in the freezer for about 30 minutes. Cut butter into small cubes. Add all ingredients except water to the cold bowl. Using a pastry blender, mash the butter and shortening. Dont over do this, stop when the butter is pea-sized. You could also take hand fulls of the flour mixture and rub it in both your hands to form a coarse dough.

Add cold water to dough and gently mix just until it forms a crumbly ball. Wrap the dough ball in plastic wrap and refrigerate for 30 minutes.

Take out the dough and divide into 2 portions. Roll out each portion on a well floured surface. Proceed with cherry pie recipe above.

Broccoli, Baby Potato and Comte (Gruyere) Cheese Tarts in Saltine Cracker Crust

 

I’d been dealing with a cranky client all week and was exhausted. I wanted a nice gourmet meal, but at the same time I didnt want to leave the house (ever felt that way?). So I used what I had on hand to make this gourmet tasting, gourmet looking, cheesy tart…just what I needed after a stressful day! The gorgeous wedge of french comte cheese Sanjeev picked up a few days ago was simply spectacular in this savory tart.

Comte is a Gruyere type French cheese made from cows milk. Comte is made only with spring and summer milk. I absolutely love this cheese. Actually, I love all cheeses, but I have extra love for Comte. Its slightly sweet, somewhat soft, and melts beautifully.

If you dont like or cant find Comte cheese..

Substitutes for Comte cheese: use Gruyere or fontina instead of Comte. Or if you want to spend less, try a mix of mozzarella and parmesan.

The tarts smelled sooo good in the oven, we were getting hungry quickly! We snacked on the ingredients while waiting for the tarts to bake.

This is a rather heavy, cheesy tart, so I made it in individual mini tart/pie pans. A mini tart along with a salad was a good portion size. If you dont have mini tart/pie tins, you can make this as one large tart and cut it into wedges.

We absolutely loved the saltine cracker crust – it was easy, smelled heavenly, and very yummy!

Broccoli, Baby Potato and Comte (Gruyere) Cheese Tarts in Saltine Cracker Crust: Recipe

makes 6 mini tarts

4oz or 5 small baby potatoes (or use a medium baking potato instead)
1/2 cup low fat milk
1 teaspoon flour
1 teaspoon dijon mustard
3/4 cup comte or gruyere cheese, cut into tiny cubes
1 cup broccoli florets, chopped
2 tablespoons parsley
salt and pepper (keep in mind the cheese, mustard, saltines are all already salty!)

for saltine cracker crust

4oz or 1 sleeve of saltine crackers
4 tablespoons butter, melted
1/2-3/4 cup hot water

Pre-heat oven to 375f.

Wrap the potatoes in a paper towel and micrrowave for 2 minutes or till half cooked. Set aside.

In a bowl, whisk together the milk, flour, and dijon mustard. Then add the cheese, broccoli florets, potatoes, parsley, salt and freshly cracked black pepper and mix well.

To make the saltine cracker crust, place the saltine crackers in a food processor and crush them to a powder. You should get about 1 1/2 cups of crushed saltines. Place this in a bowl, add melted butter and hot water and stir till it comes together like a dough. Now press the saltine cracker crust dough into a non-stick pie or tart pan. Press down on the crust to compact it and also push it up the edges of the pan.

Pour the cheese, broccoli and potato mixture into the tart/pie pan with the saltine crust. Place the pan on a foil lined baking sheet and bake on 375 degrees for about 20 minutes or just till the top of the tart starts to turn golden. Cool tarts a little, then gently lift them off the mould using a knife. Serve tart warm with a salad of your choice.

Raspberry Mousse Tartlets with a Chocolate Surprise

 I had a really stressful week. When I was talking about it to my friend K, she suggested two things. Go over to her place for dinner. Or make something decadent and post it on my blog. (Notice how both involve food?!). I went with option two. What can be more stress busting than cooking (and then making S clean up)? What can make a girl happier than a luscious raspberry mouse tart with dark chocolate ganache hidden inside?! And what can make me forget my worries that reading your comments :) Stress be gone!

 You can whip up this dessert rather quickly because there is no baking involved. The only time consuming step is chilling the tartlets for atleast 3 hours so that the filling sets.

I used store bought graham cracker mini tarts. You can use whatever pie crust you like. An oreo crust will be great too.

 The filling is raspberry jello powder or agar agar, mixed with a quick raspberry jam (recipe below), cream cheese and cream.

Whip everything together. Pour a little chocolate ganache at the bottom of the pie/tart. Then pour the raspberry mousse in and let it set.

You cant see the chocolate layer, but once you cut into the tartlet, there is a nice little chocolate surprise waiting for you.

Regular mousse involves eggs. But this recipe is eggless. You still get a wonderful, creamy yet light mousse from the addition of fruit pectin and jello powder or agar agar.

Raspberry Mousse Pie/Tart/Tartlet with Chocolate Surprise Recipe

makes about 6 mini tarts

6 mini graham cracker pie crust or any pie/tart shell of your choice. If the crust you are using needs baking, pre-bake it according to package directions

for quick chocolate ganache
2 oz dark chocolate bar
1 1/2 tbsp heavy cream

for raspberry mousse
6 oz fresh raspberries
1 1/2 tbsp fruit pectin powder
3/4 cup sugar
a pinch of salt

1 1/2 tbsp raspberry jello powder or agar-agar
1 1/2 tbsp boiling water
3 tbsp cream cheese
1/2 cup heavy cream

Start with the raspberry jam. In a medium pan, heat the raspberries, pectin, sugar and salt on medium heat. Cook till the mixture is bubbling and slightly thickened. About 4 minutes. Then press the raspberries through a strainer, discard the pulp and seeds and reserve the liquid jam. Let the jam cool.

Meanwhile, in the bowl of an electric beater, place the boiling water and jello or agar agar and mix till dissolved. Then add the cooled jam and cream cheese. Mix with a fork till well incorporated. Pour in cream. Using the beater, whip/beat the mixture on high till thick.

For the chocolate ganache, place the dark chocolate and cream in a pan and cook on low heat just untill the chocolate melts. Be careful not to burn the chocolate

Divide the chocolate ganache evenly among the pie crusts. Let it cool about 5 minutes. Then pour the raspberry mousse mixture into the pie crusts, over the chocolate ganache. Refridgerate atleast 3 hours to allow the mousse to set. Serve chilled, garnished with fresh raspberries and chocolate shavings.

NOTE (added Oct 13 ’09): the raspberry filling was very slightly runny for me. (You can see that in the picture of the cut open tart above). You may want to use more jello or agar (3 tbsp jello/agar + 3 tbsp boiling water) to help the filling set better.
